300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Premix (makes 850ml, to serve 10)

200ml clementine syrup (as made above)
Whole cranberries, as a garnish

Instructions
Making the Cordial: Place all the ingredients in a pan, heat until it reaches a simmer, stirring until the sugar dissolves. Then, take off the heat allowing it to cool down entirely. Decant into an sterilised bottle, close it and store chilled, it can be stored for about one month.
For the Premix: Combine all the spirits and syrup into one sizeable container, leave to sit for one hour, then filter it , ideally through muslin, so it's completely strained.
For serving: Measure 85ml of your batch mix to a cocktail shaker containing ice, gently stirring gently for about 60 seconds to cool it down. Strain to a chilled martini glass or similar, top with a few cranberries and complete it using a light spray of the essential oil over the top.
